Whether you don't have any on hand or want to make it yourself, my mother's homemade vegetable stock is always a pleasure and enhances every dish it's used in.

Even though buying a pre-made vegetable broth takes less time, my mother's homemade vegetable stock's flavor will beat any store-bought product.

These steps will result in a flavorful broth that will enhance your dishes:

  1. Finely chop the onion and garlic and sauté them in a little olive oil. Chop the soup vegetables into small pieces, add them to the pot, and lightly roast them (to develop roasted flavors).
  2. Then pour in 1 liter of water, bring to a boil, and let it simmer over low heat for about 20 minutes. Don’t forget to add salt and pepper!
  3. Once the broth is ready after 20 minutes, strain it through a sieve and pour only the liquid into jars.

Important: The finished broth will keep in the fridge for about 1 week.
